Liquorice, Balsamic, Tarragon, Honey and White Chocolate

The inspiration of this dessert came after spending time with world-renowned pastry chef Paco Torreblanca demonstrating his skills in restaurant desserts. The dessert consists of a white chocolate disk, liquorice powder, apple vinegar and balsamic reduction, isomalt tube, wild rocket and tarragon flowers, spiced rice pudding, chocolate and honey-centered parfait, and honey powder.
