Lemon Lime and Bitters

This dessert was designed exclusively for George Calombaris to feature as a pressure test during MasterChef Season 6. Also as part of The Press Club’s dessert menu, it is displayed here as the restaurant version. The dish consists of a lemon and a lime white chocolate dome; the lemon filled with creamy Greek yoghurt tapioca with lemon and lime zest, and the lime filled with lemon, lime and bitters curd; both flocked with green and yellow velvet spray. The dessert is served with mahlepi frangipane sponge, vanilla semolina custard, caramel tuile, and a spray of bitter essence vaporiser.
