Golden Plate

This dessert was designed for The Press Club. The dish came about as a bit of a joke. As fennel is so distinctive to any Greek kitchen, by adding it to a dish it can then be proudly declared as Greek! The dessert consists of Mahlepi and mascarpone mousse, whipped caramelia ganache, vanilla creme, fennel pollen sponge, fresh and wild fennel fronds, and fennel stalks compressed in caramel. The ‘golden plate’ made from white chocolate, caramel and toasted fennel seeds is then torched to collapse over the dessert. It is finished with a creamy liquid nitrogen snow made from the Cypriot dessert wine St Nicholas Commandaria.
