This dessert was designed for George Calombaris for a dinner event held at Ossiano, Atlantis The Palm in Dubai. Dates are an ultimate luxury food of the Arabian Peninsula, a much-valued symbol of hospitality and an integral part of the region’s history and cultural heritage. Honouring the immaculate quality and wide variety of dates found in this part of the world, this dessert showcased its finest;

Valrhona Taïnori bonbon with a date puree and raspberry jam filling, date and plum sorbet with almond and Greek basil, sticky date pudding and a caramelia top collapsing into the dessert with warm caramel sauce poured over, distillation of date and ginger served in a test tube, date and honey puree with warm honey mousse and spiced fairy floss, and doughnut-oil-fried and caramelised brioche.
