This dessert was designed for Gazi. The inspiration for this dish came after a trip to Athens in Greece and having the priviledge of walking amongst the ruins of the Acropolis. The magnificent composition of perfectly balanced mammoth structures creates a monumental scenery of remarkable beauty. This dessert commemorates the Greek phenomenon and the flavours change according to the seasonal availability of fresh produce. The dessert consists of blood orange mousse; gluten-free chocolate sponge; chocolate, coffee, mastic and almond soil; and blood orange gel.
